New Year in China – Different parts of China follow different traditions, but the following are the most widely practiced.
New Years Eve dinner is the most important dinner in the Chinese calendar, for this is usually a family reunion dinner. Normally fish will be served. Dumplings are the most important dish in northern China. These two dishes signify propriety.
Fireworks are used to expel evil. Right after midnight on New Years Eve, fireworks will be launched to celebrate the coming of the new year. It is believed that the person who launches the first firework will obtain good luck.
Red envelopes containing money, which can range from a few Yuan to a few thousand are usually given by adults, especially married couples and the elderly to children. It is believed that the money will suppress evil, keep them healthy and give them a long life.

100ml of V.I.P Jiu 8
50ml of Cointreau
250ml of bitter lemon
10 ice cubes
2 lemon twists
Pour all ingredients except the ice and lemon twists into large mixing glass and stir well. Share ice cubes between two high-ball glasses, pour the V.I.P. Jiu 8 mixture into the glasses, garnish with lemon twists, serve with straw.
